Our first suggestion is an incredibly creamy Pumpkin Spice Oatmeal. It’s a cozy combination of oats, creamy yogurt (or quark), pumpkin puree, and aromatic pumpkin spice (you can find the recipe for our homemade pumpkin spice mix in the oatmeal recipe link). Is there anything better than a warm bowl of pumpkin oatmeal on a chilly morning?

Pumpkin spice oatmeal isn't our only trick for a pumpkin-filled breakfast. Another delicious option, which works perfectly as a breakfast for kids, is these fluffy Pumpkin Pancakes. Which Pumpkin is Best for Cooking?
For all our recipes, we use Hokkaido pumpkin (also known as Red Kuri squash). It has a slightly sweet flesh that works great in both savory dishes and sweet bakes. Hokkaido is perfect for cream soups, sauces, casseroles, pasta, salads, buns, and so much more. Once blended, it has a smooth, creamy consistency. Plus, it’s relatively small, so you don’t have to worry about being left with a huge amount of leftovers. Besides Hokkaido, you can successfully use Butternut squash or Musquée de Provence (Muscat pumpkin). Butternut squash is sweet and buttery, working well in dishes like cream soup or cakes. Muscat, on the other hand, is mild in taste and soft, making it suitable for braising or stewing.
How to Make Pumpkin Puree?
In our recipes, we use Hokkaido pumpkin. First, cut it into pieces and use a spoon to remove the seeds and the stringy pulp from the center. Next, bake it in an oven at 180°C (350°F) with convection until soft (approx. 40 min). Take it out of the oven when the edges are slightly charred and water starts to pool on the flesh. Once the pumpkin cools down, remove the skin (although it’s worth remembering that Hokkaido skin is edible) and blend the pieces into a smooth paste using a blender. Pumpkin puree can be made in advance and stored in a closed jar in the fridge for up to about 5 days.
